Poon did intensive dance training eight hours a day, followed by academics. She graduated a year in advance and at the age of 18, was accepted as a principal with the State Theater in Gelsenkirchen, West Germany. She danced with them for four years. The company did classical and contemporary repertoire. In 1984, Poon joined her family and moved to the Bay Area. She appeared as soloist with the San Francisco Opera Ballet, The Peninsula Ballet, the Ruth Langridge Dance Company and Theater Ballet of San Francisco.
